Also known as the artichoke thistle, Cynara cardunculus is native to the western and central Mediterranean regions. The flower buds–artichokes–can be eaten braised, as can the stems. Artichoke oil pressed from the seeds is similar to sunflower oil in composition and in use.

With its imposing architectural structure, a beautiful thistle head and large silvery grey leaves, it has provided much inspiration for colour schemes and for printed and drawn textiles.
